In our home we use coconut, soy and almond milk depending on the person and the recipe. We use coconut yogurt, Daiya cheese and cashew nut based ice cream.

Dairy Free Chocolate Fudge
After some serious chocolate testing we have come up with an easy 2 ingredient dairy free chocolate fudge recipe that will please even your dairy friends.
Ingredients:
2 cups Enjoy Life Semi-Sweet Chocolate Chips
1 Container Sweetened Condensed Coconut Milk
Note: You will need to use Sweetened Condensed Coconut Milk not coconut cream or canned coconut milk in this recipe.
Instructions:
- Place the Enjoy Life Semi-Sweet Chocolate Chips and the Sweetened Condensed Coconut Milk in a microwave safe bowl and mix twice.
- Microwave for 35 seconds and then mix several more times.
- Microwave again for 30 seconds and stir till smooth.
- Pour chocolate fudge mixture into a parchment paper lined 8 inch by 8 inch pan.
- Place fudge in refrigerator to set up, about an hour.
- Remove fudge from pan and slice.
- Enjoy your dairy free chocolate fudge
- Fudge will do best refrigerated

Peppermint Candy Cane Dairy Free Fudge
If you are looking for a more festive dairy free fudge, try making peppermint candy cane dairy free fudge. You will follow the same recipe as above but you will need to add 1-2 tsp of peppermint extract to your fudge mixture during your final mixing.
You can also add crushed peppermint candy pieces to the top of your fudge once you have poured it into the 8 inch by 8 inch pan.
You will need:
2 cups Enjoy Life Semi-Sweet Chocolate Chips
1 Container Sweetened Condensed Coconut Milk
1 – 2 tsp Pure Peppermint Extract
